Toast to the Town: Behind the Build
Schoharie, NY – Each year, SEEC gathers the community for Toast to the Town — a celebration of individuals who ASPIRE, ENLIGHTEN and make our region that much brighter. This year, SEEC’s signature Toast to the Town is getting a new twist with an inside look at The Parrott House during its active renovation.
The Parrott House
The Parrott House is a historic 16,000-square-foot Victorian landmark that has been vacant for decades. Built around 1870, The Parrott House is of Italianate design serving as a hotel and restaurant in its past. A Schoharie County business directory 1872-1872 lists Sidney & Parrott as the proprietors specifying William Parrott, Jr. and William H. Sidney as the owners.
Today, it’s in the process of being transformed into a boutique hotel and award-winning restaurant group opening in 2026. As SEEC’s first Impact Fund investment the $1.5 million loan is catalyzing private financing and demonstrating how patient capital can revitalize historic rural assets.
The Parrott House restoration aligns with SEEC’s mission to strengthen Schoharie County through strategic investment in historic preservation, placemaking, and community-led economic development. By bringing guests behind the build, SEEC demonstrates that rural renaissance isn’t theoretical—it’s happening in real time, one strategic investment at a time.
Toast to the Town (With a Twist): An Exclusive Hard-Hat Preview of The Parrott House Renovation

Enjoy a signature cocktail, live jazz from the Sirius Quartet, and a rare, hard-hat sneak-peek at the craftsmanship bringing the heart of Main St back to life.
Evening Highlights
5:00–5:40 PM: Arrival & Self-Guided Tour
Guests will receive colorful hard hats and explore accessible construction areas featuring before-and-after displays and restoration work. A signature cocktail and live jazz by the Sirius Quartet set the tone for an evening celebrating progress over perfection.
5:40–5:50 PM: Program & Stories

Julie Pacatte, SEEC Executive Director, will share how the Impact Fund works and why strategic investment in historic properties matters for downtown revitalization.

Alex and Nick, Parrott House Owners, will tell the story of discovering this landmark on NY Route 30 and their vision for creating a destination that honors Schoharie’s heritage while building its future.
5:50–6:05 PM: ASPIRE & ENLIGHTEN Awards
SEEC will recognize the 2025 ASPIRE & ENLIGHTEN award recipients—community champions whose work exemplifies the rural renaissance mindset. The awards, presented by SEEC founders Dusty and Tom Putnam, celebrate individuals and organizations who inspire innovation, education, and growth across Schoharie County.
6:05–6:30 PM: Mingle & Celebrate
Guests will network with municipal leaders and fellow community builders while enjoying cocktails, jazz, and photo opportunities amid the construction site.
