Over the summer growing season, gardeners across the Mohawk Valley have been hard at work and are seeing the fruits (pun intended) of their labor.  Tomatoes of many varieties are ripening across the Mohawk Valley. Sometimes it’s hard for the Mohawk Valley gardener to judge in early spring how many tomato plants to grow, and to have any idea how many juicy ripe tomatoes there will be at the end of the season.

To help with ideas of what to do with your well earned abundance of tomatoes, Heirloom Tomato Salad is an easy, tasty recipe, using your homegrown tomatoes that you and your family will enjoy!

Market Recipe of the Week: Heirloom Tomato Salad

SERVES: 4

TOTAL TIME: 10 minutes

*All ingredients currently available at the Cooperstown Farmers’ Market.

Ingredients Tomato Salad - Mohawk Valley Today

•1 pound heirloom tomatoes, sliced into 1/2-inch wedges*

•1 cup colored grape tomatoes, halved*

•sea salt, or kosher salt, to taste

•fresh ground black pepper, to taste

•1/2 cup thinly sliced red onions

•1 tablespoon extra virgin olive oil

•2 teaspoon balsamic vinegar

•1 clove garlic, minced*

•⅓ cup crumbled feta cheese*

•2 tablespoons chopped fresh basil*

•1 tablespoon chopped fresh parsley*

Instructions

  1. Arrange tomatoes in a salad bowl and sprinkle with salt, and pepper.
  2. Add onions over the tomatoes.
  3. In a small mixing bowl combine olive oil, balsamic vinegar, and garlic; drizzle over salad and gently toss to combine.
  4. Taste for salt and/or vinegar; adjust to taste.
  5. Top the salad with crumbled feta.
  6. Garnish with chopped basil and parsley. Serve and enjoy!
